Postnatal Congee

Congee is a universal comfort food, but particularly nourishing for all of those new mamas out there. Make a big batch at the end of the week and enjoy it with whatever toppings you like! (We’re partial to roasted chicken, cilantro and chili oil.)

List of Ingredients (shop for ingredients)

  • 1 cup Rice (we used brown rice here—white rice works too but will be a bit more porridgey)

  • 4 cups Chicken Broth

  • 4 cups Water

  • 1 Skin-On Chicken Breast

  • Chili Oil (optional)

  • Cilantro

Steps

  • Place rice, bone broth and water into a large, heavy-bottomed pot. Cover and bring to a boil, then reduce to a simmer and continue to simmer, for 2-3 hours or until rice takes on a consistency of porridge. Stir every now and then, adding a bit of extra water if rice becomes dry.

  • Preheat oven to 350°F. Pat chicken breast dry, then season with a bit of salt and pepper and a splash of olive oil. Place in a roasting dish or cast-iron pan and bake for 30 minutes, until the internal temperature reaches 165°F and the juices run clear. When cool enough to handle, shred the chicken.

  • Serve each bowl with a generous handful of shredded chicken, a few sprigs of cilantro and an optional spoonful of chili oil on top.

Optional additions for postnatal health:

Hard-Boiled Eggs: Add the hard boiled eggs post-cooking. Eggs are an excellent source of good quality protein, along with essential vitamins and minerals, such as iron, calcium, and vitamins A, D, E and K, all ideal for providing strength to new mothers.

Chicken: 1lb of skinless chicken breast, diced and added to sauce pan pre-cooking. Chicken is rich in amino acids that are important for collagen rebuilding, which is necessary for healing from c-section incisions, episiotomies or tears.

Black sesame seeds: Soak 2 tablespoons of black sesame seeds in water, and then sprinkle on the cooked rice dish. Black sesame seeds nourish the reproductive system, build blood for postpartum recovery, and boost milk supply.
